easy summer happy hour menu


Last night I had a couple of girlfriends over in the evening to hang out and chat. I was feeling a little fancy and wanted to try out some new recipes. I'm all about easy ingredients and prep when it comes to entertaining. I want to spend my time eating the food and hanging out with my guests, not cooking. 




I hopped on the inter-webs and found two delicious sounding recipes that used similar ingredients. Both called for fresh basil which was great because my plant was turning into a bush and needed to be "harvested."



I made these apricots with basil-goat cheese and almonds, and these crostini with prosciutto, goat cheese and fig jam. They were amazing!  I paired them with some wine, sparkling water, fresh cherries and grapes, and gourmet olives. It took me about 15 minutes total to prepare the whole spread.

I chose to make the crostini "build your own." One guest is a vegetarian, so I didn't want our meat juice all up in her food ;)
